Simple and Delicious Dahi Toast

- 250 Greek yogurt
- 1 fresh chili
- 1/2 cup fresh cilantro
- 1/2 cup fresh parsley
- 1 tbsp olive oil
- 4 tbsp ghee
- 1 tsp black mustard seeds
- 1/2 cups curry leaves
- 1 onion
- 4 bread slices
- salt to taste

Instructions
Breakfast is my favorite meal of the day. Unfortunately, we don't have the pleasure of serving it daily and can mostly enjoy it during weekends. However, when we do have the opportunity to prepare breakfast, we try to make the best of it.
Another guilty pleasure of mine is, well, eating sandwiches. So, when I saw Priya Krishna's 'Dahi Toast,' I was immediately in love and decided that I needed to try it.
Trust me when I tell you that this is one of those quick breakfast ideas that you will repeat over and over again. We make it at least once per month now.
This may not be the original version, but it's close to it. The adjustments I made are simply because of our preferences. Therefore, this is what you have to do.
- In a pan, heat 2 tbsp of ghee. When it's completely melted, add the black mustard seeds and curry leaves and let it sit on medium-low heat for a couple of minutes or until the mustard starts to pop. Leave it aside.
- Finely chop the onion, fresh green chili, parsley, and cilantro (sorry, Priya, but I love the taste of parsley in this dish). Mix them with Greek yogurt, olive oil, and salt.
- Take 4 beautiful and equal pieces of bread. We only eat home-baked bread, so this is what I use for this sandwich as well. It doesn't have to be a special bread type, but I suggest using a whole grain or a sourdough one.
- Put the yogurt composition on two slices and top them with the remaining two.
- In a second pan, heat the other 2 tbsp of ghee. When the ghee is melted, place the sandwiches in the pan. Let them fry for 2-3 minutes on each side or until crispy and golden.
- Remove them from the pan, put them on a plate, and top them with the spiced melted ghee. Serve immediately.
As you can see, this is a very easy breakfast idea you can make even when you are on the run. Is it a healthy breakfast? Well, I would lie to say that it is, but you won't actually care about that aspect after the first bite. And it's not like you eat this every day.
Anyhow, the word dahi means 'the curd of soured curdled milk', so what you have here is actually a yogurt sandwich that beats many grilled cheese ones.
