- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 250ml water
- 1 tbsp soy sauce
- 2 eggs
- 4-5 cups of cabbage
- 1 medium-sized sweet potato
- 2-3 green onions
- 12-14 strips of bacon
- 1 inch fresh ginger
- fresh red chili to taste
- Okonomiyaki sauce to taste (we used the Otafuku one)
- Mayo to taste
- 4 tbsp vegetable oil for frying
- salt and pepper to taste

Instructions
A while ago, we received from Otafuku a sample of their special Okonomiyaki sauce. Thus, naturally, we had to do something about it.
Now, I have to be honest and admit that this is not the first time we've tried to prepare the famous Japanese pancake. However, we've put all our ambitions to work this time. After a week of eating multiple Okonomiyaki recipes, we've finally decided on a winning version.
If you ever heard of the so-called 'Okonomiyaki pizza,' you know that you can make it with any protein. From shrimps to bacon, you can create wonderful dishes. So, I will tell you how to make Okonomiyaki, or how we love to eat it, but you can adapt to your own tastes and preferences.
- Combine the flour with salt, pepper, and baking powder in a bowl. With the dry mixture ready, you can start pouring the wet ingredients. So, add the water, soy sauce, and eggs.
- Using a whisk, stir to combine until you get a homogenous mixture, then let it rest.
- Now, it's time to prepare the other components. Chop the cabbage and place it in a bowl. Season it with salt. This is very important because you don't want your cabbage to be blunt. Next, peel and grate your sweet potato and your ginger. Chop the green onion and red chili. Add everything to the cabbage bowl and mix very well to combine.
- With all ingredients ready, you can make the final mix. What does this mean? It means to transfer the veggies into your already prepared egg-flour mixture.
- Carefully stir, and if you think that you have too much cabbage, you are on the safe side. Anyway, if you feel that the batter is too soft, you can add a little bit more flour. You should be working with a mixture very similar to the pancake one.
- So, in a non-stick skillet, heat up a tbsp of oil. Turn the heat to medium, and add a cup of composition to the skillet.
- Add slices of bacon on the top side and let it cook for 2-3 minutes.
- Flip it, so the bacon side has the chance to cook as well. Rub some sauce over the already cooked side and let it cook for another 2-3 minutes.
- When ready, transfer the Japanese pancake to a plate, and drizzle more sauce and mayo. Top it with extra green onion, chili, ginger, or whatever you like.
- Repeat the cooking process for all the remaining composition.
And this is how you prepare this Okonomiyaki recipe. As you can imagine, our version is not the original one because in Romania we can't find some ingredients such as dashi, beni shoga or bonito flakes very easily. But if you can get ahold of them don't hesitate to improve this dish.
Anyway, since I mentioned that our interpretation is far from the original, I feel the need to tell you that this recipe is an old one. Furthermore, it is believed to be linked with a 16th-century dish called funoyaki. However, Okonomiyaki, as we know it today, was given to the world by the Japanese culture, most specifically the Hiroshima and Kansai regions.
