- 500 g boneless chicken thighs skin on
- 1 tsp sweet paprika

- 3 gherkins
- 1 shallot
- 1 tsp brown sugar
- Sriracha sauce to taste

Instructions
Show me a person who doesn't like burgers, and I will have a very hard time believing you. I personally love them. I think they are the most rewarding comfort food available. The beauty is that even though the traditional recipe requires beef, there are so many other proteins you can use.
For today, I chose to use a chicken burger patty, juicy, seasoned and fried to perfection. I know that working with chicken can be a little bit trickier because you can very easily dry it out. However, I will let you in on how I managed to turn a boring chicken into a juicy chicken burger recipe. So here it goes.
- The essential part about this recipe is to work with chicken thighs with skin on. That fatty part will make the difference and will turn your patty into a juicy one. So don't even think of working with other parts of the chicken.
- This being said, chop the thighs into 2-3 cm pieces and place them into a bowl.
- Put the bowl in the freezer and let it sit there for 1 hour.
- Take the bowl out of the freezer and mince it. I use a meat mincer, but you can also use a food processor.
- Season the minced meat with salt, pepper, paprika, and garlic powder. Mix well to combine.
- Using the burger press, form 4 burger patties. Place them on a plate and let them sit in the fridge for another hour or so.
- When you are ready to eat, cut the potatoes into wedges and place them on an oven-proof tray. Season them and make sure that each piece is perfectly coated.
- Bake them into the preheated oven at 200 degrees Celsius (400 F) for 30-40 minutes or until golden and crispy.
- While this happens, let's discuss the chicken burger toppings. I personally prefer this dish only with a simple sauce, cheese, and some salad.
- To make the sauce, place the mayo into a bowl. Chop the onion and the gherkins and add them in there as well. Add the sugar and the Sriracha sauce and stir to combine. Let it rest.
- Heat up a cast-iron skillet. Add the frying oil and fry each burger patty at medium heat.
- Cook them for 4-5 minutes on each side or until they start becoming crispy. Be advised that smoke will take over your kitchen.
- I personally use Joshua Weissman's burger buns recipe. You can very well buy or prepare any kind of buns you prefer, but I do advise you to make your own.
- Regardless of the buns you use, cut them in half. Heat up a pan and melt the butter. Place the buns in the pan and sear them for a couple of minutes.
- Great! Let's form these burgers. Put some sauce on each half of the bun and top them with salad. Add a burger patty on the lower part of the patty, then a slice of cheese, another burger patty, and another slice of cheese. Finish with the top part of the bun.
- Serve immediately with the spicy fries.
